BRAISED BABY BOK CHOY
I love the crunch of fresh bok choy, so whenever I see it in the market, I make sure to grab some. This is a very simple recipe and is great as a side dish for fish or on top of rice or simple on its own.
INGREDIENTS (Serves 4)
8 baby bok choy, rough chopped
2 tablespoons canola oil
1 teaspoon sesame oil
2 cloves minced garlic
1 tablespoons mirin
1 cup chicken stock or dashi
2 tablespoons soy sauce
1 teaspoon fish sauce
2 tablespoons fried shallots, for garnish
PREPARATION
Heat a large skillet or wok on medium-high. Add canola and sesame oils and coat pan. Add bok choy and sauté for one minute. Add garlic and sauté until fragrant, one minute.
Add mirin, chicken broth (or dashi), soy sauce and fish sauce, and gently combine. Cover pan and lower heat to a simmer. Continue to braise for 6 minutes. Take off cover and allow liquid to evaporate so sauce thickens, about 2 minutes more.
When ready to serve, sprinkle on some fried shallots as a garnish.
