AIR-FRIED LEMON SOLE
Not too long ago, I purchased a new GE oven that has an air fry option. It took me months before I even bothered to try it, but who knew? It works like a charm. If you’re a fan of fried fish, but want to keep the fat at a minimum, here’s a simple recipe that still has a great crunch. And for those who don’t have an air fryer, it also works well just baked in the oven.
INGREDIENTS (serves 2)
1 lb lemon sole
2 eggs, beaten
1 cup flour
1 cup panko
3 teaspoons favorite spice mix
Spray olive oil
Salt and pepper
PREPARATION
Lay out three shallow bowls. Place flour in one, eggs in another and panko in the last. Place one teaspoon of your favorite spice mix in each and mix to incorporate.
Cut fish into two equal pieces. Season with salt and pepper. Dredge each half first in flour, then eggs, then panko. Spritz each side with olive oil.
Place a wire rack on sheet pan. Brush wire rack with olive oil. Place fish pieces on top and place in oven to air fry at 400 degrees for 12 minutes. If you’re using a conventional baking oven, bake for 20-25 minutes at 400 degrees.
I like to serve this with roasted asparagus and tomatoes as a side dish.
