HAMBURGER CASSEROLE

Whenever I make burgers for myself and my husband, I’ll often make more than I know we’ll eat just so I can use the leftovers in something else. It’s a great way to save time and not waste food. This is a very simple recipe, but it packs a lot of flavor. It works with beef burgers, turkey burgers, vegan burgers or even hot dogs.

INGREDIENTS (serves 4)

2 tablespoons olive oil

1 onion, thinly sliced

3 cloves of garlic, minced

1 fresh poblano pepper, diced

4 cooked hamburgers, chopped into cubes

1 can kidney beans, drained and rinsed

¾ cup barbecue sauce

½ cup water

1 cup sharp cheddar cheese, grated (use large holes)

Salt and pepper to taste

PREPARATION

In a large skillet, heat the oil on medium heat. Add the onions and cook down until they begin to brown, about 6-8 minutes. Add the garlic and pepper and cook for one minute. Add the hamburger, beans, barbecue sauce, water, salt and pepper. Combine the ingredients and bring to a boil. Lower heat and simmer for 5 minutes. Taste and re-season if necessary.

Grease a 9 x 13 casserole dish. Pour contents into casserole and spread out evenly. Place in oven for 30 minutes. Remove from oven and sprinkle cheese evenly on top. Place back in oven for three minutes or until cheese is melted.

Remove from oven and serve.
