QUICK ASIAN SOUP BASE
During the holiday season, there’s always so much going on that I find myself doing a heck of a lot of take-out between events. I don’t always have time to cook or make an 8-hour bone broth, so in a pinch, this simple Asian Soup base satisfies my soup cravings in a fraction of the time it takes me to make most things.
You can use this for almost any Asian-style soup. Once you have the base, you can add noodles, fish balls, bok choy, shrimp, mushrooms, scallions or whatever you’re craving.
INGREDIENTS
2 packets dashi powder (I like Kayanoya)
2 quarts water
1 cup vegetable stock
1 tablespoon soy sauce
1 tablespoon mirin
1 teaspoon fish sauce
Preparation
Place all the ingredients in a pot. Bring up to a boil, then down to a simmer for fifteen minutes. Remove dashi packets.
