T-Day Leftover Hash

I’m not sure if I prefer the holiday meal itself or what I can do with the leftovers better. It’s really a toss-up. But if you’ve got some stragglers staying over, this hearty breakfast will keep the party going.

INGREDIENTS (serves 2)

3 tablespoons butter

1 onion, diced

2 celery stalks, diced

1 cup stuffing

1 cup turkey breast, cubed

2 eggs

Salt & pepper for seasoning

PREPARATION

Heat a large skillet. Add two tablespoons of butter. Allow to melt and coat bottom of pan. Add onions and celery and sauté until transparent, about 3-4 minutes. Add the stuffing, turkey breast, salt and pepper to taste and mix all together allowing the stuffing and turkey to just begin to brown, about 2 minutes. 

Push the hash to one half of the skillet. Add the third tablespoon of butter on the empty half, allowing it to coat bottom as it melts. Crack two eggs, side by side. Season with salt and pepper to taste. For sunny side up eggs, cook until whites become opaque. If you don’t like runny eggs, flip eggs over and cook to desired doneness. (Feel free to scramble the eggs if you prefer.)

Plate hash on bottom of each plate. Place one fried egg on top of each plate.
