Chicken Casserole & Biscuits
As much as I try not to use packaged foods in my cooking, I must admit, there are a few products from my youth that I’ve always loved. Pillsbury’s biscuits are one of them and the smell of them baking takes me back to a childhood where I played outside with friends until my mom opened the front door and screamed out my name to come home. Her voice could be heard for blocks. My humiliation was only tempered by the welcoming smell of those biscuits.
I recently saw these extra-large ones in the supermarket, and I thought they would make a great topping for a classic chicken casserole. And indeed, they did! I’m sure these biscuits would also work on top of a beef stew or seafood-based stew. According to the Pillsbury Doughboy, it’s hard to wrong.
INGREDIENTS (Serves 8)
3 tablespoons butter
1 onion, sliced
1 carrot, small chop
2 celery stalks, small chop
6 cremini mushrooms, sliced
3 cloves garlic, minced
1 can corn, drained
2 cups cooked chicken, cubed
1 can cream of chicken soup
½ cup water or chicken broth
½ teaspoon red pepper flakes
Salt and pepper to taste

PREPARATION
Preheat oven to 375 degrees.
In a large skillet, melt the butter. Add the onion and sauté until beginning to brown, about 6 minutes. Add carrot and celery, continue to sauté for 3 minutes. Add mushrooms, garlic, and corn and sauté for two minutes. Add cooked chicken, cream of chicken soup, water or broth, red pepper flakes, salt and pepper. Gently stir until combined. Bring to a light boil and then down to a simmer for two to three minutes.
Butter a 10” round banking dish. Pour in chicken mixture and spread out evenly. Open biscuit package as directed and lightly place biscuits on top.
Bake for 15 to 17 minutes until the biscuits are browned.
(Note: Depending on your oven, sometimes the bottom of the biscuits don’t cook through as well as the tops. Either try to keep in oven as long as possible until just before the biscuits begin to burn, OR, bake the biscuits separately as directed on package and place on top of dish right before serving.)
