ICE CREAM BOMBE CAKE

In my family, it isn’t a birthday without an ice cream cake. For years we relied on Carvel and then eventually upped our game to Haagen Daaz for those special occasions. They certainly do a fine job, but one year my husband was determined to customize it especially for me. And boy, he came up with a doozy! He bought a special “hemisphere pan” that can be put in the freezer. But if you don’t want to buy any special equipment, you could adapt this for a large, deep baking dish.

INGREDIENTS

FOR THE BASE

1 sheet pan of your favorite brownies or blondies

2 pints dulce de leche

2 pints caramel cone ice cream

Powdered sugar for garnish.

PREPARATION

Prepare your favorite brownie or blondie recipe. Allow them to cool before assembling. Place on cutting board and use a serrated knife to cut in half width wise. In other words, if you have made 1” thick brownies, you want to “butterfly” it so that it is ½” thick. Now you should have 2 halves of a brownie sheet.

Line the dome with a large sheet of plastic wrap. Make sure the edges overflow from the dome. This is critical to help with the removal of the cake at the end.

Using ¾ of the brownies/blondies, try to use as big a piece as possible, line the domb with the brownies/blondies. You will have to make cuts here and there to make it fit. Try not to have too many holes or seams because the ice cream will seep through. (Make sure to reserve at least ¼ of brownies/blondies for center layer).

Place 2 pints of ice cream on the counter and allow to soften until spreadable, but not liquid.

Spread ice cream on top of brownies and use a spatula to even out layer. Place in freezer for two hours.

Remove cake from freezer and place the remaining layer of brownies/blondies on top. Spread the remaining two pints of ice cream on top of brownies and use a spatula to even out layer. The brownie layer and ice cream on the top of the dome should be flat so that when you flip it over, it can rest evenly on a plate. You may need to add more ice cream or cut back the brownie layer. Place in freezer for four hours.

When it’s time to serve, place a plate on top of dome and flip over. Remove the plastic wrap. Garnish with powdered sugar.

Allow to rest for 5-10 minutes to soften before cutting.
